Sloppy Joes
- 8 oz lean ground beef
- 1 tbsp canola oil
- ½ onion, diced
- 1 carrot, diced
- ½ red or green pepper, diced
- 1 stalk celery, diced
- 2 garlic cloves, minced
- 6 - 8 small crimini mushrooms, sliced
- 2 tsp worcestershire sauce
- 1 tsp summer savory (or Italian seasoning)
- ½ tsp dry mustard
- ¼ tsp nutmeg
- 8 oz tomato sauce
- 2 tbsp tomato paste
- 2 - 3 oz bourbon (optional)
- slices of cheese (optional)
- In a skillet over medium heat, add the canola oil and heat until shimmering.
- Add the ground beef and cook until almost all the pink is gone, approximately 5 minutes.
- Add the onion, carrot, peppers, and celery.
- Add salt and pepper to taste.
- Cook until the vegetables begin to soften, approximately 5 minutes.
- Add the garlic and mushrooms.
- Cook until the garlic is fragrant, approximately 1 minute.
- Add the dry mustard, nutmeg and summer savory, stirring to distribute.
- Add the tomato paste, tomato sauce, worcestershire sauce, and bourbon, stirring to combine.
- Bring mixture to a strong simmer, then reduce heat to low/medium low and cover.
- Simmer lightly, stirring occasionally, for approximately 20 minutes to meld the flavors.
- Taste and add salt and pepper as needed.
- Serve inside a toasted bun and top with cheese (optional), broiling the cheese to melt, if desired.
