Ingredients
  • 8 - 12 oz beef bottom round, cut into 1 inch pieces
  • ½ onion, cut into ½ inch pieces
  • ½ green onion, cut into ½ inch pieces
  • ½ red pepper, cut into ½ inch pieces
  • ⅓ cup green olives, sliced
  • 1 tbsp tomato paste
  • 1 14oz can diced tomatoes
  • 1 cup vegetable broth
  • 1 cup beef broth
  • 1 tbsp apple cider vinegar
  • ½ cup orange juice
  • ½ tsp oregano (preferably mexican oregano)
  • ½ tsp ground cumin
  • 1 bay leaf
  • ½ tsp salt
  • ¼ tsp bleck pepper
Instructions
  1. Set up your Uno and rice cooker.
  2. Set the temperature to 165 degrees.
  3. Set the timer to 8 hours.
  4. Add all the ingredients into the rice cooker.
  5. Stir to incorporate and start the Uno.
  6. Cook for the set time before serving with cilantro and lime, if desired.
