Banana Pancakes
- ½ cup all purpose flour
- 1 tsp baking powder
- 1½ tsp granulated sugar
- ⅛ tsp salt
- 1 banana
- 1 egg, slightly beaten
- ½ cup milk
- 1 tbsp melted butter
- ¼ tsp vanilla extract
- In a medium bowl, mix the flour, salt, baking powder and sugar together.
- In a second bowl, mash the bananas.
- Stir the egg, milk, melted butter, and vanilla into the bananas.
- Combine the wet ingredients into the dry ingredients, stirring until just combined.The batter will be slightly lumpy.
- Heat a griddle or frying pan over Medium/Medium-high heat.
- Lightly grease the griddle with canola oil, coconut oil (my favorite!), or butter.
- Pour ¼ to ⅓ cup of batter onto the griddle and cook until golden brown before flipping.
- Cook the second side until golden brown.
- Plate and serve with your favorite topping (syrup, honey, jelly, etc).
One simple trick for knowing when to flip a pancake is to watch for the top side to slightly dry out and bubbles to stop forming.
