Banana Pancakes

Ingredients
  • ½ cup all purpose flour
  • 1 tsp baking powder
  • 1½ tsp granulated sugar
  • ⅛ tsp salt
  • 1 banana
  • 1 egg, slightly beaten
  • ½ cup milk
  • 1 tbsp melted butter
  • ¼ tsp vanilla extract
Instructions
  1. In a medium bowl, mix the flour, salt, baking powder and sugar together.
  2. In a second bowl, mash the bananas.
  3. Stir the egg, milk, melted butter, and vanilla into the bananas.
  4. Combine the wet ingredients into the dry ingredients, stirring until just combined.The batter will be slightly lumpy.
  5. Heat a griddle or frying pan over Medium/Medium-high heat.
  6. Lightly grease the griddle with canola oil, coconut oil (my favorite!), or butter.
  7. Pour ¼ to ⅓ cup of batter onto the griddle and cook until golden brown before flipping.
  8. Cook the second side until golden brown.
  9. Plate and serve with your favorite topping (syrup, honey, jelly, etc).
Notes
One simple trick for knowing when to flip a pancake is to watch for the top side to slightly dry out and bubbles to stop forming.
