Sloppy Joes
- 8 oz ground beef
- ½ small yellow onion, diced
- 1 stalk celery, diced
- 1 carrot, julienned
- 2 tbsp tomato paste
- 7 oz crushed tomatoes (1/2 can)
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- ½ tsp marjoram
- ½ tsp tarragon
- 1 tbsp canola oil
- salt and pepper to taste
- hamburger buns
- cheese (optional)
- In a skillet over Medium heat, heat half the oil until shimmering.
- Add the onion, carrot, and celery and sweat until softened, stirring regularly, approximately 5 minutes.
- Remove the vegetables to a bowl.
- Add the remaining oil to the skillet along with the ground beef.
- Brown the ground beef, crumbling with a spoon until no longer pink, approximately 5 minutes.
- Add the vegetables back into the skillet and stir to combine.
- Add the paprika, tarragon, and marjoram, stirring to combine and allow to bloom for a minute.
- Add the tomato paste and stir to combine and cook for 1 to 2 minutes to deepen the flavor.
- Add the crushed tomatoes and Worcestershire sauce, stirring to combine.
- Reduce the heat to Low/Medium-Low and allow the mixture to simmer for 5 minutes, melding the flavors.
- Serve on toasted hamburger buns, cheese optional!
