2 cups oats (1 cup coarsely pulsed in a food processor)
¾ cup of raisins
Instructions
Preheat the oven to 350 degrees F and prepare the baking trays with grease, silicone mats, or parchment paper.
In a small bowl, sift together the flour, cinnamon, salt, and baking soda and set aside.
In an electric mixer, cream the butter and sugars, mixing well.
Add the egg, stirring into the butter/sugar mixture completely.
Incorporate the sifted dry ingredients until just wet.
Stir in the milk.
Add the oatmeal and finally fold in the raisins.
Place the dough with teaspoons on the baking trays and bake for about 20 minutes or until they are golden brown. If you want them crisp, leave them for 20 minutes or if you want them a little soft, leave them for less time but until lightly browned.
Note: Substitute chocolate chips for the raisins to make a delicious variant!
