Lemon Ricotta Pancakes with Cherry Almond Compote

Today’s breakfast was a pairing for these two recipes – Lemon Blueberry Ricotta Waffles and Cherry Almond Compote . These two together made a wondrously tasty breakfast I just had to share, especially with cherries being in season. I omitted the blueberries in the waffle recipe and just made pancakes with the batter for a silky and tangy result. The compote would be great on cheesecake as well just in case you are heading to a picnic or summer barbecue and want to treat your friends to a delicious desert. OK, now that I have your attention with that beautiful recipe title, I am sure you want to know what it is. Well, it is meatballs in a roasted red pepper sauce. Doesn’t that sound delicious? I thought so, that’s why I made it. I used mild Italian sausage, whole milk ricotta, and panko crumbs for the meatballs to create a mild flavor that will not compete with the robust sauce. What?  Did I just hear a collected groan and harrumph of disbelief in being able to make a delicious lasagna for one? Well, you are partially correct. This recipe is perfect for two… or one with a nice serving as leftovers. Today’s post is not a meal for one, but a party dessert that is certain to please. This cheesecake really rocks, but the topping wins the day. Most of the time I bring a main dish to these parties, but this time I decided to switch things around and bring a dessert. This cheesecake is a variant of the German käsekuchen which uses quark – an ingredient hard to find here in the states.
