Instant Pot Chicken Noodle Soup

Based on a friend’s suggestion, I broke down and picked up an Instant Pot. I scored a sweet deal on the Instant Pot Duo Mini, a small, feature-packed cooker perfect for Cooking4OneandaHalf. Of course, I tested it per the instructions, then tested it with white rice, then with small red beans. The results were good, the time to cook was quick, and overall I was satisfied with adding this device to my cooking repertoire. So, I needed to cook something in it to really showcase the quick and tasty results so often touted by others. I decided on Chicken Noodle Soup. I know, you could claim I was working with a dish that probably has hundreds of recipes on the web – and I did…

Spicy Beef Noodles with Asparagus

Today I had a hankering for noodles – tasty spicy fried noodles. With that desire and having asparagus available from earlier this week, I decided using thin sliced beef and red pepper would be perfect for my fried noodles. I picked up a package of Fortune Yakisoba Hot and Spicy Stir Fry Noodles at the local store to use as the base for my spicy fried noodles. These noodles are available in the refrigerated section and are simple to prepare – simply soak in hot water, drain well and stir fry. The rest of this recipe is a basic stir fry with one twist – I added Tom Yum Paste to the sauce mix. Are you ready to prepare something delicious and healthy in less than 30 minutes…

Drunken Noodles

Feeling like something spicy?  Feeling like something incredibly satisfying?  How about robust flavors?  Well, if all this sounds great to you, may I suggest tonight’s meal – Drunken Noodles! I made this recipe with chicken, Thai basil, cilantro, fish sauce, ginger, shallot, scallions, cabbage, carrot and a host of other supporting ingredients. Yes, I used a chicken breast (of course) but thinly sliced beef, prawns, etc work equally well. The challenge of this dish is in the preparation. Have everything ready to go before you start because once you get started, it comes together quickly. I’m hungry, so let’s dive in! Sunday Chicken Dinner…

I am going old school tonight with the proverbial Sunday chicken dinner… except I opted to twist this meal a little.  In reality, it does not take a lot of effort, but it does take a little bit of time. Shall we get started making some Smoked Chicken Noodle Soup? Smoked Chicken Noodle Soup Ingredients: 1/2 whole fryer chicken 1 tbsp vegetable oil 1/2 onion, divided (1 part large sections, the other diced) 2 carrots (one halved lengthwise, one diced) 3 stalks celery (2 halved lengthwise, 1 diced) 1 clove garlic, minced 2 tsp dry thyme leaves 2 tsp dry rosemary, crushed 2 tsp sage 1 bay leaf black pepper kosher salt 5 cups of water 2 cups egg noodles 1/2 cup white wine…

Kielbasa and Macaroni with Peas and Carrots

Tonight, it is another recipe I created for the family when my daughters were younger. The beauty of this recipe is that it can be tweaked and twisted to suit whatever is in your pantry or on your taste buds!  I made the basic variation, which was delicious! Other variations include using Italian seasoning instead of herbs de provence, substituing broccoli or thinly sliced brussel sprouts for the peas and carrots, etc.  Let your imagination run wild or just try the basic… but do give it a try! Kielbasa and Macaroni with Peas and Carrots Ingredients: 1/2 kielbasa (approximately 6 to 8 oz), split and sliced 1/3 box of elbow macaroni (approximately 5 oz) 1/2 bag of frozen peas and carrots (approximately 6 oz…

Spaetzle with Brown Butter and Thyme

This side dish is great with many German dishes – sauerbraten, rouladen, schnitzel, wurst, etc.  I will admit up front and unabashedly, I use imported dry spaetzle because it is so easy. The key for me is to add a little something special to the spaetzle – like this brown butter and thyme variation.   Spaetzle with Brown Butter and Thyme Ingredients: 1 1/2 cups of dry spaetzle 1 tbsp butter 1/4 tsp dry thyme 1 tsp olive oil salt cracked black pepper Preparation: Prepare the spaetzle per the package instructions.Shave a minute or two off the cooking time as you want the spaetzle to be a bit firmer. Drain the spaetzle and toss with the olive oil to keep it loose and from sticking…

Baked Rigatoni with Bolognese Sauce

Now that we have a delicious Bolognese sauce, it’s time to make something with it. It would be delicious with any pasta by itself, but I think Sunday deserves something just a little more special – Baked Rigatoni! Baked Rigatoni Ingredients: 1 1/2 cups of dried rigatoni (approximately 1/3 of a 1lb box) 1/3 cup of shredded Italian cheese (Romano, Parmesan, Asiago, Provolone, etc) 1/3 cup of mozzarella, divided into 1 tsp nuggets 1/4 cherry tomatoes, halved 1 tbsp fresh basil, chiffonade Canola oil spray Preparation: Preheat the oven to 375 degrees. Spray canola oil in a small glassware baking dish (approximately 3 cups in size) to prevent sticking and ease clean-up. Prepare the rigatoni per the package instructions, approximately…

Red Pepper and Shallot Orzo

Orzo is funny… I think it is one of those overlooked pastas because most people see it in soups. Yet, it is versatile, like in this simple accompaniment to many main dishes (steak, chicken, salmon, etc). So let’s get to making some orzo and appreciate this under-utilized pasta! Red Pepper and Shallot Orzo Ingredients: 1/2 cup of orzo 4 cups of water 1/2 tsp salt 1/3 cup red pepper, diced 1 small/medium shallot, diced 1 1/2 tsp olive oil 1 tsp butter fresh cracked pepper to taste Preparation: In a medium stock pot, boil the 4 cups of water and add the salt. Add the orzo and stir, then cook uncovered stirring occasionally for 9 minutes before draining. In…

Flaking out… Asparagus Beef with Rice Flakes

Tonight, let’s have some fun with rice flakes. I don’t know many people that do not enjoy pad see ew, pad kee mao, drunken noodles, etc but I also don’t know many people that cook with rice flakes so they can enjoy these type of meals at home. Well, we are going to change that with this recipe! Asparagus Beef with Rice Flakes Ingredients: 6 oz thin sliced beef, sliced into strips 1/2 lb asparagus spears, cut into 1 inch sections 1 carrot, peeled and sliced on a bias 1 stalk celery, cut on bias 1/2 red pepper (diced or sliced, your preference) 2 tsp garlic, minced 1 1/2 tsp sesame oil togarishi shichimi 4 oz rice flakes white…
