Here’s another Manhattan riff from the team at Liquor.com. The Longshoreman drops the Angostura bitters and adds Averna Amaro from Sicily. The update is a welcome one as Averna Amaro is a wonderful sipper all on its own. The slightly sweet, slightly bitter herbal notes from the Averna coupled with the raisin-forward syrupy Punt e Mes cuts through and tames the 100 proof spicy-sweet rye whiskey just enough to balance everything out. With the temperature dropping in late Fall, I turn to amaro as a regular sipper – it just seems so right. And tonight’s cocktail features Amaro Montenegro, a unique amaro with loads of herbaceous flavors and perfect hint of sweetness. This amaro shines when paired with whiskey and really pops with tonight’s rye.  This beauty is mainly amaro – whiskey plays a supporting role – and these two are well-matched like Bogie and Bacall, Nikc and Nora, Fred and Ginger, and a host of other famous pairings. Italian Chocolate Martini

Hey, it has been a while since I posted a Friday cocktail! It’s time to get back to creating treats to share with you! Big Chief

Tonight we return with a potent tipple – the Big Chief. Punch states, this strong and stirred cocktail is “named after the Big Chief Indians down here in New Orleans that lead their tribes in the St. Joseph’s Day parade.”  I really enjoyed this full bodied, spirit forward riff of the Manhattan (by way of the Longshoreman, Redhook, and Brooklyn) created by Abigail Gullo, head bartender at Compère Lapin in New Orleans. Paper Plane

I recently had this cocktail at a restaurant near my office. Yeah, it was happy hour so I thought, “What the heck?”  Well, I liked it a lot even though this establishment made every effort to ensure I would never return! Anyway, I thought I could tweak this beauty a wee bit and share it with you. This cocktail, created by New York’s Sam Ross (of Penicillin fame), uses equal parts of 4 ingredients (Bourbon, Aperol, Amaro Nonino, and lemon juice) to produce a beautiful and delicious drink. Given that one of the essential ingredients is difficult to get in my area (Amaro Nonino), I am going to make a substitution and an addition to compensate. Prospector

I finally found a cocktail that is as varied as this Spring weather. Meet the Prospector. While researching this evening’s tipple, I found recipes that used tequila, cognac, blended scotch, or bourbon as the main spirit and absolutley no consensus on the other ingredients. From what I can tell, all these cocktails named Prospector have their own origins but there is nothing easily identifiable in regards to an actual history. So I will through caution to the wind and present the Prospector that caught my eye – a Manhattan variant (imagine that – dang, I need to get out more!).  Mixing bourbon and Averno Amaro seems like a natural pairing, but spiking it with a ‘pop’ of sherry is what got my attention. Brooklyn

While researching last week’s cocktail, Remember the Maine, I came across this one. The golden hue and the combination of ingredients had me immediately intrigued. And wow, what a deliciously complex cocktail! This beauty is over 100 years old, comes in various forms and is actually a tweak of a tweak on the venerable Manhattan. The original tweak is the Red Hook – rye, sweet vermouth and maraschino and this one swaps out the sweet vermouth for dry and amaro for the bitters while retaining the maraschino for sweetness. This cocktail has layers of flavors and I have to admit in many ways it is superior to the Manhattan. Now… don’t go interrupting my Friday night happy hour by giving me a Bronx…

Black Manhattan

Tonight’s cocktail is another riff on one of my favorite drinks – the Manhattan.  This twist on the classic could actually be better as it’s flavors are deep and reflective. Created in San Francisco’s Bourbon & Branch by Todd Smith, this simple substitution of Averno for sweet vermouth really changes this cocktail’s taste profile. This beauty is perfect for a rowdy happy hour or quiet, intimate moments; it can be the life of the party or the epitome of relaxed style. Embarcadero

Wow, this week has been a whirlwind. Between meetings and meet-ups, chores, recipe development and experimentation, and other tasks, I am ready to slow down and catch my breath. What better way to relax than with a new Happy Hour tipple – the Embarcadero. The Embarcadero cocktail is a variant of the Manhattan with amaro replacing the Angostura bitters. I was not able to find much more about this cocktail other than it is based on a recipe on Liquor.com from the renowned mixologist Claire Sprouse (@clairesprouse). I love researching the back story to the cocktail and I figured this one had to have an interesting one. But alas, it appears it does not or if it does, it has not been documented. Well, not having…

Caffè Corretto

Here is another coffee based cocktail, a twist on the Italian ‘corrected coffee’. Caffè Corretto describes anytime espresso has been ‘augmented’ with a spirit like grappa, sambuca, brandy, etc. For my variation, I decided to increase the coffee depth by adding Galliano Ristretto while adding a subtle sweetness and herbal aspect with amaro and simple syrup. This cocktail is the Flatliner’s best friend – strong and reliable, yet easy going and self-effacing. Caffè Corretto is another easy sipper that works best as an after-dinner libation or dessert accompaniment – perfect for what I wanted tonight. Ahhh… time to relax and enjoy the evening, just me and my ‘corrected coffee’. I hope you enjoy your Friday evening too…
