Experiment: Omurice

Last night I tried my hand at making Omurice – the popular Japanese dish that is a mash-up of fried rice and an omelette. Typically flavored with ketchup (which I am not a fan of as many of you know), I decided to twist the fried rice using a recipe I saw on TV recently. I cooked the rice in a dashi broth – dashi, mirin, sake, and soy sauce – and used that as my primary flavoring. The rest of the fried rice was made with diced onion, minced garlic, diced red pepper, asparagus, and diced smoked ham. Blueberry Lemon Muffins

After hours of research based on a request from my wife, I found a simple, but absolutely delicious blueberry muffin recipe. No unusual or special ingredients, no tricky or complicated directions, just a simple flour, sugar, oil, egg, and milk recipe. Actually, I can see the base aspect of this recipe as a blank canvas – blueberry, lemon blueberry, apple cinnamon, cherry chocolate, pumpkin spice… you get the idea. Call it breakfast or dessert, these muffins won’t last long once you make them. Lemon Ricotta Pancakes with Cherry Almond Compote

Today’s breakfast was a pairing for these two recipes – Lemon Blueberry Ricotta Waffles and Cherry Almond Compote . These two together made a wondrously tasty breakfast I just had to share, especially with cherries being in season. I omitted the blueberries in the waffle recipe and just made pancakes with the batter for a silky and tangy result. The compote would be great on cheesecake as well just in case you are heading to a picnic or summer barbecue and want to treat your friends to a delicious desert. A Mother’s Day ‘Toast’

Cooking for someone is it a great way to show your love for them.  Let’s celebrate our Mothers and the loving women in our lives today and every day.  Sending out blessings to my daughter Amanda and all other Mothers as I share this special French toast I made as a treat for the ‘star’ in my life today. And in remembrance of my mom, who let me experiment in the kitchen and allowed me to learn how to create simple, delicious meals that I enjoy sharing with all of you here. Chicken Fried Steak and Country Gravy

Today I want to share with you how I make chicken fried steak. There are many recipes for this delicious breakfast (typically) and I won’t even profess mine is the best – but I will say it is satisfying and has never received a complaint! Experiment: Plantain Bread

Recently, I had a few really ripe plantains that would not have made good tostones, mangu, or mofongo – the only recipes I know (so far) for plantains.  So I thought, could I use them like overripe bananas and make a bread with them? Cherry Almond Compote

In making the Greek Yogurt Pancakes, I wanted to switch out my usual maple syrup for something a bit different and unique. Seeing that I had fresh cherries, I thought why not make a simple fruit compote. I must admit I think this simple fruit topping is under rated and over looked.
