Roasted Rosemary Garlic Potato Slices

Here is my take on a roasted potato – simple and tasty and like a rustic potato chip. And who doesn’t like potato chips! I seasoned the potato with olive oil, pepper, and Spice Island’s Rosemary Garlic Grinder to make it even easier to prepare.  Heat the oven up, it’s roasted potato slice time!

Roasted Rosemary Garlic Potato Slices
 
Ingredients
  • 1 russet potato, sliced uniformly into ⅛ inch slices
  • 4 cups of near boiling water
  • 2 tbsp white vinegar
  • 2 tbsp olive oil
  • Spice Island Rosemary Garlic blend
  • Fresh racked pepper
Instructions
  1. Preheat the oven to 400 degrees.
  2. Place the potato slices into a medium glass bowl and ensure the potatoes are submerged.
  3. Add the hot water and vinegar.
  4. Place bowl into the microwave for 3 - 4 minutes at 50% power.
  5. Allow the potato slices to rest for 10 minutes.
  6. Heat the bowl a second time for 3 - 4 minutes at 50% power.
  7. Allow to rest for another 10 minutes before draining well.
  8. Add the olive oil and toss to coat.
  9. Place the slices onto a large baking sheet and sprinkle with pepper and rosemary garlic blend.
  10. Bake in the oven for 30 minutes on the middle rack, checking halfway through if the slices should be turned over when lightly browned.
  11. Once lightly browned and turned over, change the oven to broil on high leaving the potatoes on the middle rack.
  12. Check the potato slices every 2 minutes until browned as desired.
