German Honey Cookies

How about another cookie recipe to help you bring holiday cheer to your friends and family?  As a child, I remember my mom making a honey cookie that required a month of rest, but the recipe was lost long ago. So I spent some time searching and found a recipe close to what I remembered my mom making (but doesn’t require the month long slumber!) so today I am giving it a try (with my usual adjustments!) and sharing the results with you.

Ingredients
  • ¾ cups honey
  • ¼ cup white sugar
  • ½ cup (1 stick) butter
  • 1 egg
  • 2 cups all purpose flour
  • ½ tsp baking soda
  • ½ tsp vanilla
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
Instructions
  1. Preheat the oven to 350 degrees.
  2. Melt the butter, sugar, and honey in a small saucepan over low heat.
  3. Cool the butter/sugar/honey mixture to room temperature.
  4. Mix the vanilla, egg, baking soda, ginger and nutmeg together.
  5. Add the egg/spice mix above to the cooled honey/sugar mix.
  6. Add the flour to the wet ingredients in 3 - 4 batches, stirring until blended.
  7. Drop teaspoons of batter onto a prepared cookie sheet at least 1 inch apart and bake 12 - 15 minutes, checking at 10 minutes.
Notes
Makes approximately 36 cookies
