Mojito

It looks like warmer weather has finally arrived here in the Pacific Northwest and with it, I am ready to enjoy one of my favorite warm weather cocktails – the Mojito. Originally from Cuba, this cocktail is popular nearly everywhere now. This drink is easier to make than you may think – the basic recipe is lime, mint, simple syrup, rum and club soda. Naturally, I like to make small adjustments as in adding a little bit of lemon when muddling the mint and lime. Depending on your tastes, this drink can be prepared strained or not. Each variation produces subtle differences and I find it delicious either way. Perfect for a summer afternoon or evening, the Mojito is as refreshing or potent as you desire – just play with the rum and club soda ratios. So before the sun sinks into the Pacific, let’s get to enjoying this beautiful evening with a wonderful Mojito!

Ingredients
  • 1½ oz white rum
  • 6 mint leaves and a sprig for garnish
  • 1 oz fresh juice (from quartered limes and lemons, 2 lime quarters to 1 lemon quarter)
  • 1 tsp simple syrup
  • 1 oz club soda
Instructions
  1. Place the mint leaves, quartered lime and lemon into a glass.
  2. Add a few pieces of crushed ice and muddle well to release the mint oils and citrus juice and oils.
  3. Add the ice, rum, and simple syrup stirring to combine well.
  4. Strain into a chilled glass (if desired) and top with club soda, giving it a light swirl to combine.
  5. Add a sprig of mint as a garnish before serving.
Notes
I use a Sodastream to make my own club soda... and strained the lime and lemon quarters from the glass, but left the mint for enhanced flavor!
