Menu for the 2nd Week of November

Well, this weekend in the Pacific Northwest has been interesting weather-wise. As I write this post, the snow is falling and beginning to pile up. This snow event is definitely atypical for this area and makes me want to cook carbohydrate laden meals and prepare for hibernation! So I will try to resist that desire when planning this week’s menu so we do not fall into late Autumn lethargy. To combat that ‘carb coma’ trap, I will toss several stir fry type meals into the menu to inject vibrant fresh vegetables and robust flavors. Of course, I will not completely remove all those wonderful Fall comfort foods from this week’s menu. Everything in moderation, right? Here we go, let’s see what is on deck for this week!


Sunday – Spicy Beef Noodles with Asparagus

After the satisfying goulash and fresh bread yesterday, let’s shoot for something a bit lighter.


Monday – Pan-Fried Pork Loin Chops with Mushroom Gravy and Roasted Brussel Sprouts

Tonight, I will rely on a flavor packed vegetable side dish to balance the desire for a carbohydrate heavy meal.


Tuesday – Penne all’Arrabbiata

This dish will be a new recipe based on several different recipes I have found. Of course, you can count on me to give it my own twist!


Wednesday – Biscuits and Chorizo Gravy

Yes, it is another breakfast for dinner… a perfect choice for a mid-week dinner.


Thursday – Garlic Cashew Stir Fry

Another vibrant vegetable packed dish, balancing out the heavier meal last night! And I have two versions to choose from…


Friday – Roast Beef Sliders

Deliciously simple, this dinner is good for any hectic Friday night. And if you skip, it makes a great weekend lunch option so it will not get wasted.


Saturday – Chicken Noodle Soup

Comfort food at it’s finest… and perfect for a lazy Saturday relaxing at home.
