No Bake Pumpkin Mousse

I’m back!  I want to thank everyone for their patience and support during my recent absence. Between launching products at work and enjoying time with my new fiancee, the blog has taken a backseat. After the wedding, I will have to rename ‘Cooking-4-One’ as I will be cooking for one and a half (as she puts it). We will see what we come up with for a new name. Of course, I look forward to introducing her to all of you as well as having her add her own recipes here!

Now for everyone that enjoys pumpkin spice time of year, this no-bake pumpkin mousse is for you. I made this recipe with full amounts of the major ingredients of pumpkin and cream cheese so you can bring this delectable to parties and gatherings, because this simple, yet tasty dessert is best when shared. So let’s indulge ourselves, family, and friends with this treat and celebrate Fall in fine fashion!

 

No Bake Pumpkin Mousse

Ingredients
  • 1 15oz can of pumpkin puree
  • 8 oz cream cheese at room temperature
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
Instructions
  1. In a medium bowl, add the cream and mix on medium until frothy, approximately 1 to 2 minutes.
  2. Add the powdered sugar and vanilla extract.
  3. Mix on Medium\Medium-High until stiff peaks form.
  4. Transfer whipped cream to a second bowl.
  5. In the medium bowl (no need to clean it), add the cream cheese and mix on Medium-Low until smooth.
  6. Add the pumpkin puree and spices, mix on Medium until well incorporated.
  7. Add the whipped cream and fold it in until smooth and consistent.
  8. Transfer mixture to a piping bag with a medium tip (or a recloseable bag).
  9. Pipe mixture into small ramekins or dessert cups in a circular fashion.
  10. Sprinkle additional ground cinnamon as a garnish.
