Spicy Thai Basil Chicken Fried Rice

Tonight’s recipe is a combination of several Thai Basil Chicken Fried Rice recipes I found during my research and of course, my own little tweaks. The primary tweak is adding more vegetables (a the great recipe extender!) providing different textures and flavors to the standard fried rice. Naturally, the key to this dish is the Thai basil. I have read that Italian or regular basil can be substituted, but I cannot imagine that being possible. Thai basil has a very unique flavor and fragrance – which is what this dish is all about! Chicken Chili Verde

Tonight’s dish is a request/challenge from a friend of mine. He told me this recipe for Chili Verde from Chef John is the best he ever tried and he thought I could ‘massage’ the recipe so it could be made for one. Well, I did some additional research and came up with the tweaked recipe below. Normally, chili verde is made with pork, but tonight I was feeling like chicken so that is what I used. Yellow Curry Chicken

Do you ever get a hankering for a certain flavor or dish?  Tonight, I really wanted a robust yellow curry but did not feel like going out. So… I made it for myself. I increased the variety of vegetables and flavors with two types of peppers, pickled galangal and ginger, and sambal. I paired it with jasmine rice, but I bet it would work just as well with thin rice noodles. The results were delicious, if I say so myself. Chicken Kimchi Fried Rice

Fried rice… one of my favorite dishes. There are so many ways to make this easy and delicious dish. Tonight, I am going simple with a quick chicken kimchi fried rice. Preparing Sous Vide Chicken Cordon Bleu

Today, I want to show you how I prepare chicken cordon bleu for cooking sous vide style. If you have ever made chicken cordon bleu before, you know that cheese usually begins spilling out before the chicken is done, making a mess and impacting the final results you hoped for. So rather than use a combination of complicated folds and toothpicks/skewers to avoid this situation, I use the vacuum sealed bag to keep everything tight and in place while it cooks in the water bath. Once the chicken is cooked thoroughly, simply open the vacuum bag and finish preparing the rolled chicken breast by breading and frying or just pan searing it.
