Arroz con Pollo

Here is another popular recipe at my place. Guests that enjoy this dish regularly ask for the recipe – so now I am sharing it with you! This recipe makes a healthy portion of arroz con pollo goodness, but don’t panic. It has plenty of vegetables to round out the dish nicely.  Like every arroz con pollo dish you have ever had in a restaurant, this one is simply my take on it and I believe it works well.  Give it a try and then you can let me know how it worked for you! Rice Stuffing

Here is another family favorite recipe I want to share with everyone before Thanksgiving. I get requests for this recipe every year from friends that have enjoyed this stuffing at past holiday meals. Heck, I even make this recipe for myself when I want to enjoy a holiday like meal just because! Leftovers will not last long either as they are incredible fried in a little butter the next day then added to leftover turkey and gravy for a hot turkey sandwich. Save Print Rice Stuffing Prep time:  5 mins Cook time:  45 mins Total time:  50 mins   Ingredients 2 – 3 cups of cooked white rice, cooled 1 lb of ground pork sausage (preferably Hot) 2 – 3 eggs 1½ tbsp ground sage 1…

Yellow Curry Fried Rice

As part of the planning, I knew I would have Thai basil, ginger, and cilantro left over from the Drunken Noodles meal, so it was time for me to make one of my favorite dishes – fried rice. Fried rice is one of the ultimate dishes in that you can make it so many different ways with whatever ingredients you have on hand. But tonight, it is not just any fried rice, but yellow curry fried rice.  I have had several different variations of this dish at restaurants; some with pineapple, some without, some with Thai basil, some without, etc. Tonight I am making the version without pineapple just because I have so many vegetables planned. Again, the key to this dish is prior preparation. I find my…

Swedish Meatballs

Prepare to have your taste buds engaged! This recipe for Swedish Meatballs produces a wonderfully flavorful meal that is well worth the effort.  This recipe can be made with just ground beef, but it comes alive with a mix of beef and lamb (or beef, lamb and pork!). The addition of nutmeg and allspice with a slight hint of cinnamon really warms up the flavors and deepens the creamy gravy augmented with sour cream.  Are you intrigued now?  If so, let’s get to it! Prawn Kimchi Fried Rice

When all that menu planning I discussed in an earlier post gets sidetracked, it is time to improvise. Today I was surveying the refrigerator and found the following items: about 1 cup of kimchi 1 carrot 3 green onions 1 red pepper 2 heads of broccoli Hmmm, that looks like the ingredients for a tasty fried rice.  I checked in the freezer and I had a partial bag of medium (51-60) prawns – perfect as the protein in my fried rice plan. So let’s get cooking, shall we? Prawn Kimchi Fried Rice Ingredients: 24 medium prawns (51-60 size), thawed, deveined, peeled and tails removed 3/4 – 1 cup of kimchi, cut into 3/4 inch 1 carrot, sliced diagonally or julienned 3 green…

Loco Moco Monday Night

Here it is, another week off and running. Feeling the end of summer and wishing I was on vacation somewhere tropical (like Maui!), I decided to bring the islands to me via Loco Moco. Relaxing on a Friday Night with Sweet and Sour Chicken

Ahhh… it is the typical end of the work week and today I really do not want to spend a ton of time in the kitchen. And sometimes I just do not want to go out – I just want to chill out, but I have to eat. This meal is easy, provided you have the ‘special’ ingredients of the sauce and chunk pineapple. The rest is typical pantry and vegetable crisper fare.  So, let’s indulge on a nice relaxing Friday night with a tasty meal without having to order take out, delivery or even leave the house! Sweet and Sour Chicken Ingredients: 1 chicken breast, cut into 3/4 x 1 inch strips 1/2 red pepper, cut into 3/4 inch…

It’s Saturday, I bet there are some leftovers I could use…

Back in the What? Prepare a weekly menu! Are you crazy? post, I mentioned using pulled pork and kimchi leftovers for a pork kimchi fried rice. For those of you that have been waiting (or wondering if I would make that dish!), your wait is over. Today I made this recipe for lunch – I hope you enjoy it as much as I did! Pulled Pork and Kimchi Fried Rice 1 1/2 cups of pulled pork, cut as desired 1 cup of kimchi, cut (using scissors in a glass bowl to save your cutting boards!) 1 egg, whisked 2 dashes Ichimi togarishi 1/2 red pepper, diced 1 stalk celery, sliced 1 tsp garlic, minced 1 tbsp peanut oil 1 tsp sesame oil 2 tsp Tabasco spicy…

A twist on a favorite… paella on the grill

With the summer weather continuing here (which is awesome!), I again decided to cook using the grill.  Tonight is an experiment – paella on the grill.  It is an experiment for 2 reasons. First time for me for using the grill to cook paella, obviously. But second, I am using a new seasoning – ‘Paellero’. I will comment on the flavor after trying the results! Simple paella Ingredients: 3/4 cup of pearl rice (or arborio if pearl is not available) 3 oz of chorizo, linguiça, or andouille sausage 5 -6 extra large prawns (16/20 per pound) 1 tsp garlic, minced (about 1 medium clove) 1 small shallot, minced 1 cup frozen peas 2 tsp olive oil 1/2 pkg of Paellero seasoning 2…

A quick, spicy and sweet chicken stir fry…

Tonight, I decided to make a quick chicken stir fry. With fresh vegetables, Thai cargo rice, and lean chicken breast, this meal is healthy and balanced.
