Simple Beef Satay

Here is a quick Thai inspired beef satay dish that really satisfies. Intensely flavorful and simple to prepare, I just don’t know why I haven’t made this dish before… or 100 times before as a matter of fact. I like these skewers of marinated thinly sliced beef with peanut sauce when preparing as appetizer or jasmine rice and stir fried vegetables when made as a meal. Really, nothing much more is needed.  And with these waning days of summer, it is a great excuse to fire up the grill. So invite some friends and make this tasty appetizer, your guests will thank you!

Simple Beef Satay

Ingredients
  • 9 oz lean beef, sliced into ¼ inch thick slices
  • 1 tbsp ginger, grated
  • 1 tbsp garlic, minced
  • 1 tbsp onion, grated
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 tbsp fish sauce
  • 1½ tsp rice cooking wine
  • ¼ tsp turmeric
  • 1 tbsp coriander
  • ⅛ tsp cayenne pepper
  • 1½ tsp cumin
  • 2 tsp lemongrass, minced
  • 1 tsp toasted sesame oil
Instructions
  1. In a medium bowl , whisk together all the ingredients except the beef.
  2. Add the beef and mix well before covering with plastic wrap.
  3. Place beef in refrigerator and allow to marinate for 2 to 4 hours.
  4. When ready to cook, heat the grill to Medium-High heat, clean the grate and lightly oil with vegetable oil.
  5. Skewer the beef onto skewers in an exaggerated wavy manner without pulling the waves to tightly together. Reserve the marinade.
  6. Grill the skewers for 2 to 4 minutes on the first side to create grill marks and slight charring. The skewers will release from the grate when ready to turn.
  7. Grill the second side for another 2 to 4 minutes, drizzling the reserved marinade over the beef.
  8. Finish grilling until desired doneness and serve with warm peanut sauce.
